Beef stew with Toma'amoris

Ingredients for 4 people

  • 500g beef stew
  • 500g Toma’amoris
  • 200g Toma’dor tomatoes (halved)
  • 33cl trappist or abbey beer
  • 2 onions
  • 2 carrots
  • 1 clove of garlic
  • Herbs: bay leaf, thyme, pepper and salt

Preparation

  • Heat some oil or butter in a stew pot and fry the beef stew all around until brown.
  • Add the chopped onions, carrots and crushed garlic, and fry for a few minutes until the vegetables start to soften.
  • Deglaze with the beer and reduce for a few minutes.
  • Stir in the Toma'amoris tomato sauce and add the halved Toma'dor tomatoes. Season with bay leaf, thyme, pepper and salt.
  • Turn down the heat to low, cover the pot and simmer the dish for 2-3 hours, until the meat is buttery tender and the flavours have been well absorbed.

Tip: Serve this festive stew with croquettes, creamy gratin or pommes duchesse.
