Toma'muse cake and onion

Ingredients for 4 people

  • For the cake base
  • 250 gr flour
  • 125 gr butter
  • 50 gr ground gruyere
  • Pinch of salt
  • For the filling
  • 500 gr Toma'muse tomatoes
  • 120 gr butter
  • 1 kg sweet onion (finely chopped)
  • 4 cloves of garlic (finely chopped)
  • 1 teaspoon of finely chopped rosemary
  • 100 gr gr grated gruyere
  • Olive oil
  • Pepper and salt

Preparation

  • Make the dough by mixing the flour, gruyere and butter. Add a little ice-cold water if necessary. Knead into a nice ball and wrap in cling film. Place in the fridge for 30 minutes.
  • For the filling, sauté the onion, garlic and rosemary on a low heat until nicely caramelised. Season with salt and pepper.
  • Preheat the oven to 200°C, roll out the dough for a cake tin of +- 25 cm.
  • Place the dough in the greased baking tin and poke some holes in the bottom with a fork. Place baking paper above the dough and put pearls on top. Bake for 10 minutes, then remove the baking pearls and the baking paper and bake for another 5 minutes.
  • Remove the tart from the oven and sprinkle the tart base with the ground gruyere, top with the caramelised onion. And top with the halved Toma'muse tomatoes. Season with salt and pepper and a small amount of olive oil. Place back in the oven for 20 minutes.
  • Let the tart cool for a while before removing it from the baking tin.
