Stuffed Toma'gusto with cod and tabouille

Ingredients for 4 people

  • 400g cod
  • 8 Toma'gusto tomatoes
  • 2 tablespoons semi-dried tomatoes
  • 400g fresh spinach
  • 50g rocket salad
  • 1 onion
  • 2 cloves of garlic
  • 10 tablespoons green and black olives
  • 250g couscous
  • 2 tablespoons olive oil
  • 1 stock cube
  • Pepper & salt

Preparation

  • Finely chop the onion and garlic.
  • Cut the cap off the Toma'gusto tomatoes and hollow them out. Chop the flesh finely.
  • Cut the semi-dried tomatoes into strips and the olives into rings.
  • Dissolve a stock cube in 6 dl of hot water.
  • Heat the oven for to 180 °C.
  • Heat the olive oil in a pan and fry the onion and garlic for 1 min. Add the fish and fry ± 5 min on each side.
  • Cut the fish into pieces. Add the spinach and the flesh of the tomatoes. Season with salt and pepper. Simmer for a further 2-3 min until the spinach has shrunk.
  • Fill the tomatoes with the mixture and put them in a pre-heated oven for ± 15 min.
  • Pour the hot stock over the couscous and leave to swell, covered, for 10 min.
  • Loosen the couscous with a fork and mix in the olives, half-dried tomatoes and rocket.
