Ingredients for 4 people

  • 500g pumpkin (diced)
  • 200g Toma’dor tomatoes (halved)
  • 100g feta cheese (crumbled)
  • 2 tbsp olive oil
  • Fresh thyme
  • Pe­pper and salt

Preparation

  • Heat the oven to 200°C.
  • Place the pumpkin cubes on a baking tray, drizzle with olive oil, salt and pepper, and roast for 20 minutes.
  • Add the Toma'dor tomatoes and roast for another 10 minutes.
  • Remove from the oven, crumble the feta over the top and garnish with fresh thyme. 
  • Serve hot.
