Puff pastry flapjacks with Toma'dor

Ingredients for 4 people

  • 15 Toma'dor tomatoes
  • 1 rectangular sheet of ready-made puff pastry
  • 1 large burrata
  • Handful of fresh basil
  • 2 tablespoons of olive oil
  • 1 teaspoon of Italian herbs
  • 1 egg yolk
  • Pepper and salt

Preparation

  • Heat the oven for to 180°C.
  • Cut long rectangles from the puff pastry and halve the tomatoes.
  • Cut the burrata into pieces and spoon the creamy mixture onto half the puff pastry flaps.
  • Top with half the Toma'dor tomatoes, season with salt and pepper, the Italian herbs and olive oil.
  • Finely chop half the basil and arrange on top of the burrata filling.
  • Close the puff pastry flaps and seal the edges well using a fork. Place them on a baking tray lined with baking paper.
  • Beat the egg yolk in a small bowl and brush the puff pastry flaps with the egg yolk.
  • Bake them for about 15 to 18 min in the oven until golden brown. Serve with extra basil.
