Chop the onion and crush the garlic. Quarter the Toma'licious tomatoes and peel and grate the ginger. Remove as much chicken meat as possible from the legs.
Heat olive oil in a pan and fry the chicken for 5 minutes. Remove the chicken from the pan, add a splash of olive oil and sauté the garlic and onion. Add the red curry paste and grated ginger and simmer for 1 minute.
Add the Toma'licious tomatoes, chicken, coconut milk and soy sauce and simmer on a low heat for 20 minutes. Add salt and pepper to taste.
Cook the jasmine rice according to the instructions on the packet.
