Cod in the oven with Parma ham, olives and roasted Toma'dor

Ingredients for 4 people

  • 1 bowl of Toma'dor tomatoes
  • 4 cod fillets
  • 4 slices of Parma ham
  • 4 sprigs of sage leaves
  • Handful of fresh parsley
  • 12 large green olives
  • 3 tablespoons of capers
  • 3 tablespoons of olive oil
  • Pepper and salt

Preparation

  • Heat the oven for to 180°C.
  • Take the cod fillets, season them with salt and pepper and place a sage leaf on top.
  • Wrap the cod fillets in the Parma ham and arrange them on a baking tray lined with baking paper.
  • Halve the olives and arrange them on the baking tray together with the capers.
  • Arrange the Toma'dor tomatoes between them.
  • Drizzle with olive oil, season again with some pepper and arrange some more sage leaves in between.
  • Bake the cod fillets in the oven for about 15 min.
  • Finish with some finely chopped parsley.
